Baked kid with potatoes is a very delicious and inviting second course of meat, a great classic of the Easter tradition which, together with lamb , certainly cannot be missing from the festive table. The kid is flavored with rosemary, onions, pepper, salt and lemon zest, to dilute the characteristic aftertaste of sheepmeat, and then gently cooked in the oven with the addition of wine and other herbs, for a final result that is tender, delicate and succulent .
To prepare this recipe, the shoulder of the kid is indicated, which has both the pulp and the very small bones. There is no need for a long marinade, but the meat should be left to soak in white wine for at least an hour; after this time, it is drained and then added to the potatoes, preferably new ones, for an even tastier touch. The secret lies in seasoning the kid and the potatoes together with the herbs and the onions, in order to flavor everything well before cooking.
