50g flour
30g icing sugar
3 egg yolks
100g sugar
150g heavy cream
4 egg whites
2 g de sel
A packet of vanilla sugar

Preparation :

Start by preparing the shortcrust pastry: in a bowl, mix the flour, grated lemon zest, egg yolk and soft butter until a sandy mixture forms.
Pour the mixture into a mold covered with parchment paper and compact it well with a spatula and your fingers.
Cut the apples into small pieces without peeling them and place them in the mould.
Next, prepare the dough for the cake: in a bowl, mix the flour, icing sugar, 3 egg yolks, heavy cream, cream cheese and vanilla sugar until a homogeneous mixture and no lumps form.
In another bowl, whip the egg whites until stiff and gently fold them into the previous mixture.
