Turkish Cheese Pancakes

Turkish Cheese Pancakes: Gözleme

Turkish pancakes with cheese, Gözleme is a traditional Turkish flat bread, made of hand-rolled sheets, it looks a bit like Batbouts. An unmissable delicacy.

Ingredients :

For the dough
3 cups of all-purpose flour
3 teaspoons quick rising yeast
2 teaspoons sugar
1 teaspoon of salt
1.5 cups of warm water
For the filling
400 gr feta cheese
Chive cheese
1 handful of chopped parsley
1 tablespoon of butter

Preparation :

Mix together the flour, salt, sugar and yeast in a large bowl.
Make a cavity in the center and add the water slowly and carefully, while mixing with your hands.
Knead until everything comes together to form a soft, sticky dough (you may need to add more flour).
Cover the dough and let it rest for 15 minutes. In a separate bowl, crumble the cheese and mix with the chopped parsley.
Pull a clementine-sized piece of the dough and roll it out to the size of a baking sheet.
Place the 1 cheese mixture generously on one half of the circle.
Brush the sides with water and fold the circle in half (water will help seal).
Melt 1 teaspoon of butter in a large skillet and place the gözleme in it.
Cook on both sides. Repeat to use the rest of the dough.
Do not forget to melt 1 teaspoon of butter for each gözleme.
