Mandarin Orange Cake

INGREDIENTS :
For the Cake:
1 box yellow cake mix
1/3 cup of vegetable
3 large eggs
1 (11 or 15 ounce) can of mandarin oranges, undrained

For the Frosting:
1 Pack of instant vanilla pudding
1 (20 ounce) can of crushed pineapple
1 (16 ounce) Cool Whip

DIRECTIONS :
-Preheat oven to 350. Butter 2- 8 inch cake pans.
-Add the cake mix, oil and eggs to the bowl of a mixer and mix on low until blended. Reserve a couple of the oranges for garnish. Add the remaining oranges with their juice then mix well.
-Divide evenly into the 2 prepared cake pans and bake at 350 for about 20 to 25 minutes. Let cool in the pan for 15 minutes, then turn out onto a cake rack to cool completely.
-Blend together Cool whip, instant pudding and crushed pineapple.
-Frost cake, add the other layer and finish frosting top and sides. Garnish the top with reserved orange segments.
